560g Beef Cubes
30ml Turmeric Powder
60ml Coconut oil
2 Medium Onions Chopped
30ml Meat Masala Spice
3-4 Tomatoes grated
2 Green Chilies Chopped Finely
7 Small Brinjals halved and soaked in water
1 garlic Clove Chopped
Salt to taste
Place the beef cubes in a bowl, add the turmeric and toss to coat. Place in the fridge for 1 hour before you start cooking your curry.
Heat coconut oil in a pan, add the onion, and brown slightly. Add the meat masala and stir, taking care not to let it burn. Add the beef cubes and fry until the meat changes colour. Add the grated tomatoes and chill and stir. It should be saucy- if not, add one more grated tomato. Cook for 20 minutes on low heat.
Add the brinjals and garlic, and cook for 10 minutes or until the brinjals is cooked to your liking
Season with salt and Serve with Cauliflower Rice or mash.
