CHICKEN-A-LA-KING

INGREDIENTS:
560g Chicken Fillets
1 cups Water(to dissolve Stock cubes )
2 cubes Organic Chicken stock (Kala Organic Chicken Stock)
1 Onion, chopped
1/2 Red Bell Pepper, chopped
1/2 Green Bell Pepper, chopped
250 g Mushrooms, sliced
200ml Almond Breeze Unsweetened Almond Milk or 100ml Coconut Milk
1-2 Packet Carb Smart Chicken and Herb Instant Soup
1/2 t Paprika
Salt and pepper to taste
DIRECTIONS:
  1. Cook the Chicken in the Water and Stock cubes until fully cooked – remove the chicken and cut into bite-size pieces – retain 2/3 cup of the Chicken Stock
  2. Fry the Onion, Peppers, and Mushrooms in a non-stick pan until soft – add the Chicken and the retained Stock. – cover and simmer for 5 minutes
  3. Mix the Carb Smart Chicken and Herb instant Soup with the Almond Milk and Paprika – add to the Chicken – cover and simmer over low heat for another 10 – 15 minutes.
  4. Serve with Cauliflower Rice

    Tip: You can also fry Cubed chicken, onions, Mushrooms first and then add stock as this will intensify the flavours.
