1 Medium Cauliflower head
240g Lifestyle Chickpea Pasta from Disc hem
8-12 Mushrooms Chopped
½ Green Pepper Diced
200ml Almond Milk
45ml Chopped Cashew Nut
4 Garlic Cloves
2 Tbsp Lemon Juice
125ml Nutritional Yeast
Salt and Crushed pepper to taste
- Start by boiling your cauliflower until it is soft
- Cook the pasta according to the package instructions.
- Add the cauliflower and the rest of the ingredients listed under the sauce to a blender. Blend till smooth.
- Fry the Mushrooms and Green pepper for 5 minutes
- Add the sauce to the pasta and mix in the mushrooms and green pepper. ENJOY
Tip: You can also replace the Chickpea pasta with Cauliflower Noodles/Mushroom Noodles and then add cooked chicken pieces.
