CREAMY CAULIFLOWER PASTA

INGREDIENTS:

1 Medium Cauliflower head

240g Lifestyle Chickpea Pasta from Disc hem

8-12 Mushrooms Chopped

½ Green Pepper Diced

 

SAUCE:

200ml Almond Milk

45ml Chopped Cashew Nut

4 Garlic Cloves

 2 Tbsp Lemon Juice

125ml Nutritional Yeast

Salt and Crushed pepper to taste

 

DIRECTIONS:

  1. Start by boiling your cauliflower until it is soft
  2. Cook the pasta according to the package instructions.
  3. Add the cauliflower and the rest of the ingredients listed under the sauce to a blender. Blend till smooth.
  4. Fry the Mushrooms and Green pepper for 5 minutes
  5. Add the sauce to the pasta and mix in the mushrooms and green pepper. ENJOY

 

Tip: You can also replace the Chickpea pasta with Cauliflower Noodles/Mushroom Noodles and then add cooked chicken pieces.
