CRISPY CAULIFLOWER WAFFLES

INGREDIENTS:
Coconut oil, for greasing
1/4 cup cauliflower florets
Pinch of salt
1 egg
1 Tbsp almond flour (optional)
¼ Tsp baking powder
¼ Tbsp nutritional yeast
¼ tsp garlic powder
¼ Dried parsley
DIRECTIONS:
Preheat waffle iron to medium heat and grease generously with coconut oil.
Pulse the cauliflower florets and salt in a blender until it resembles crumbly flour.
Add the remaining ingredients to the food processor and pulse until all the ingredients are smooth.
Use a pastry brush or paper towel to apply the oil before adding the waffle batter. Ladle the batter and cook till golden and crisp. Serve immediately.
