GEM SQUASH SOUP

INGREDIENTS:

2 Gem Squash (Cooked)

1 Medium Onion

50ml Coconut Milk( or 50ml Coconut cream as a treat option)

1 Cup Water

½ Tsp Paprika

½ Turmeric

2TspCumin                                                                                                                                                                                                      
1 Tsp Ginger

1 Tsp Sweetener

½ TBSP Coconut Oil

Salt and Pepper to Taste

 

DIRECTIONS:

Fry onion with coconut oil, then add spices and fry for 1-2 minutes. Add water and your cooked gem squash flesh and boil for 5-7 minutes. Then add cream and sweetener. Remove from the stove and blend with a stick blender till smooth and serve.
