GRILLED SALMON WITH CREAM SPINACH

INGREDIENTS:

280g  (2 slices ) of salmon fillet

1 tablespoon avo/coconut oil

1/2 cup red bell pepper, chopped

2 cloves garlic, minced

200g fresh baby spinach

150ml full fat plain yogurt

1/2 teaspoon kosher salt and fresh cracked black pepper

Fresh chopped parsley and lemon slices, for serving

 

DIRECTIONS

  1. To make the grilled salmon with creamy spinach: In a large skillet over medium heat add 1/2 tablespoon of oil ,red bell pepper, and garlic and cook for about 4 minutes.
  1. Add baby spinach and season with a pinch of salt and pepper. Mix until the spinach wilts down.
  1. Add full cream yogurt and mix well until you get a creamed spinach-like texture.
  1. Heat a separate skillet on medium-high heat, melt the remaining oil. Quickly season salmon fillets on both sides with salt and pepper and place on the hot pan.
  1. Cook for 6 minutes on the first side and flip the salmon over and cook the other side for an additional 5 minutes, until salmon is cooked through and golden crisp on the edges.
  1. Divide the spinach mixture on the bottom of each plate and top with a piece of salmon. Serve the grilled salmon with spinach with a dash of lemon juice and chopped parsley. Enjoy!
