1 TBSP coconut/avocado oil
2 X 140G salmon filets
½ orange, juiced
1 cloves of garlic, minced
1 TBSP Sweetener
½ TSP thyme, finely chopped
Salt and Pepper, to taste
Pat salmon dry with a paper towel, then season with salt and pepper.
Heat the avocado/coconut oil in a pan on medium-high heat. Add salmon and cook for 3-4 minutes on each side.
Once the salmon is cooked, transfer it to a plate.
Turn the heat down to medium-low and sauté the minced garlic in the pan for 30 seconds. Add the orange juice, sweetener, and thyme. Whisk the ingredients together and leave to boil for 3-6 minutes or until reduced to a sticky consistency
Add the salmon back to pan and spoon glaze over the salmon before serving
