Spicy Chickpea Pasta



240g 100% Chickpea Pasta( Or 100% Red Lentil Pasta)

2 TBSP coconut oil

3 garlic cloves minced

½ Jalapeno diced

½ Green pepper diced

½ TSP Cayenne pepper

250g Mushroom diced

4 small tomatoes diced

50g tomato puree

1 TSP Salt (or to taste)

½ Crushed pepper

1 TBSP Nutritional Yeast

Parsley (for garnish)



Bring a large pot of salted water to a boil and boil the spaghetti for 8-10 minutes or as indicated on package directions.

Heat a large frying pan over medium-high heat and add the coconut oil, Jalapeno, garlic, and green peppers. Sauté until the garlic is fragrant and cooked through, then add mushroom and fry for an additional 3-5 minutes

Add the cayenne pepper, tomatoes, and sauté until they start losing their shape, and are no longer watery. Add the tomato puree, salt, and pepper.

When the pasta is cooked, drain, combine with tomato base sauce and let it cook together for about 2 minutes If the sauce starts getting too thick, add a little bit of water.

Finish the pasta by sprinkling on nutritional yeast and serve
