Summer Quinoa Bowl

INGREDIENTS:

60g Quinoa- uncooked


1/2 Sliced Cucumber

½ Handful Grated Carrots

1/2 Chopped purple Cabbage 

Sliced Cocktail Tomatoes 

 

Dressing:



1 TBSP Mayonnaise ( Hellerman's or Carb smart)

1 TBSP Dijon Mustard

1 TSP Lemon Juice

Tabasco Sauce to taste

1TBSP Coconut Amino’s / Balsamic Vinegar

1TBSP Apple Cider Vinegar

1 Minced Garlic Clove


DIRECTIONS:

Step 1

Prepare the quinoa as per cooking directions on the packaging. In the meanwhile combine mayonnaise, tabasco, apple cider vinegar, minced garlic, and lemon juice and coconut amino are in a bowl. Set this aside.

Step 2 

Once Quinoa has finished cooking, leave to cool for a few minutes. Then assemble your bowl with Quinoa, cucumber, carrots, cabbage and cocktail tomatoes.

Step 3 

Drizzle over-prepared and dressing, top off with fresh coriander and add salt and pepper to taste
