Grilled Chicken with Lemon and Herbs

Ingredients
- 700 g Boneless, skinless Chicken Breast about 140 each
Marinade
- 2 tbsp Fresh herbs oregano, thyme and sage
- 1 lemon zest save juice for grilling
- 4 garlic cloves minced
- 1 1/4 tsp salt
- 1/2 tsp Black pepper
- 1/4 tsp Chilli flakes optional
- 4 tbsp Coconut or Avocado oil
Instructions
- Prep the Chicken
- Flatten the thicker parts of the chicken breast using a meat tenderizer or the bottom of a heavy pan to ensure an even thickness of about2cm.
Make the Marinade:
- In a small bowl, mix the herbs, lemon zest, garlic, salt, pepper, chili flakes, and oil. Reserve 2 tablespoons of the marinade for garnish later.
Marinate
- Coat the chicken breasts thoroughly with the marinade in a bowl or zip-lock bag. Refrigerate for at least 30 minutes or up to 24 hours for deeper flavor.
Grill the Chicken:
- Preheat the grill to medium-high.Remove chicken from the marinade, letting excess drip off. Grill the chicken for 5-6 minutes per side, until the internal temperature reaches 71°C (160°F). For extra flavor, grill halved lemons alongside the chicken.
Rest and Serve:
- Allow the chicken to rest for 5-10 minutes to retain juiciness. Squeeze the grilled lemons over the chicken, garnish with fresh herbs, and drizzle the reserved marinade before serving.
