Prawn avocado cucumber salad
Fresh, vibrant, and packed with flavor! 🥑🍤 This prawn, avocado, and cucumber salad is the perfect blend of crunch, creaminess, and a hint of heat. Tossed in a zesty lime and chili dressing and topped with toasted cashews for that extra bite – it's everything your taste buds need! 🥗✨
Ingredients
- 300g g King Prawns Cooked, peeled and patted dry
- 4 handful Baby Spinach
- 1 Avo sliced
- 1 large Cucumber ends trimmed, halved widthways and spiralled into thickribbons, then patted dry, any very long strands cut in half
- 1 Thumb size Cashew Nuts toastedand roughly chopped
For the dressing
- 1 Red Chilli finely chopped (deseeded if you like)
- 1 lime zested and juiced
Instructions
- Mix all the dressing ingredients together in a large bowl with some black pepper. Tip in the prawns and leave to marinate for 10 mins.
- Lift the prawns out of the bowl and transfer to a plate,then toss the spinach in the remaining dressing. Add in the avocado and cucumber, and carefully toss to combine.
- Divide the salad between 3 plates, and top with the prawns and cashews
