QUICK AND EASY BREAKFAST

Start your day right with this nutritious and simple breakfast recipe! Our Roasted Pepper Egg Boats combine fresh vegetables and protein-packed eggs for a delicious, low-carb meal. With only a handful of ingredients like mushrooms, spring onions, and optional mozzarella for a treat, this dish is baked to perfection in just 35 minutes. Ideal for busy mornings, it’s a healthy and flavorful option to keep you satisfied and energized.

Ingredients
  

  • 1 Large Pepper
  • 2 Whole Egg
  • 100g Mushrooms sliced
  • 2 Spring onions diced
  • Herbamare salt to taste
  • Salt and Pepper to taste
  • 1 thumb-size Mozzarella (treat option)

Instructions
 

  • Preheat oven to 180 degrees celsuis.
  • Cut the pepper in half and remove seeds. Now add an egg in each ½ pepper, then add the mushrooms and spring onions on top of the egg.
  • Season to taste with herbamare/ salt and pepper to taste. Bake in the oven at 180 C for 35 minutes or till done.

Notes

NOTE: Sprinkle grated mozzarella cheese on top if using s a treat meal.
