Ingredients
  

  • 560 g Chicken Fillets
  • 1 Cup Water To dissolve stock Cubes
  • 2 Cubes Chicken Stock cubes
  • 1 Meduim Onion Chopped
  • 1/2 Medium Red bell pepper Chopped
  • 1/2 Medium Green Bell pepper Chopped
  • 250 g Mushrooms Sliced
  • 200 ml Unsweetened almond Milk Almond Breeze
  • 1-2 Packets Carb Smart Chicken and Herb Instant Soup
  • 1/2 tsp Paprika
  • Salt and pepper to taste
  • 2 pkt TrulyGoodNicer Than Noodles

Instructions
 

  • Cook the chicken in the water and stock cubes until fullycooked – remove the chicken and cut into bite-size pieces – retain 2/3 cup ofthe chicken stock
     
    Fry the onion, peppers, and mushrooms in a non-stick panuntil soft – add the chicken and the retained stock. – cover and simmer for 5minutes
     
    Mix the Carb Smart chicken and herb instant soup with the almond milk and paprika – add to the Chicken – cover and simmer over low heat for another 10 – 15 minutes.
     
    Serve with Truly Good Nicer Than Noodles
